ReplyDeleteThe problem with cooking nowadays for me is time (and organization). Pam is working her fanny off, and I get home around 6. I rarely have the ingredients on hand for dinner, so I run out to the store and get home and cook something quick. Sometimes I have enough foresight to have the ingredients on hand to throw something together in the crock pot in the morning. Then I focus on recipes that can be thrown together in 3 to 5 minutes. Try this one on for size:
Lazyman's Green Chile Chicken Stew (my own invention):
Prep time: 5 minutes, cook time 8+ hours
2 bags frozen 3 pepper and onion blend
1 bag frozen home-style hash brown potatoes
2 lbs frozen boneless, skinless chicken breasts
6 lbs frozen green chile
2 healthy shakes (approx 2 Tblsp) chopped fresh garlic
1 1/2 Tblsp (approx) chicken bouillon powder
1 to 2 tsp dried basil
Salt and cracked pepper to taste
1 to 2 Tblsp whole wheat flour to help thicken (optional)
Throw it all in a very large crock-pot and cook low for 8 hours. Stir with a sharp serrated knife to shred the chicken when done. Serve with flour tortillas and a salad on the side. Serves 12 humans (or 2 humans and 3 teenagers).
